Sole Blue

Tasting Notes

The wine is cloudy with a slight background. The nose is floral and fruity, with a faint hint of flint. In the mouth it is rich and savory, with a fine and persistent bubble that gives great freshness and drinkability.

An authentic, territorial wine perfect for a rich aperitif with canapés, fish appetizers or with a board of local cured meats.

Harvest Period

Grapes harvested in late August.

Vespaiola grapes are softly pressed and vinified in temperature-controlled stainless steel. The following spring, the wine is started for a second fermentation in the bottle. Once the refermentation is complete, the yeasts remain in the bottom of the bottle, creating an all-natural deposit and cloudiness.
