Grapes harvested in late August.

Vinification

Vespaiola grapes are softly pressed and vinified in temperature-controlled stainless steel. The following spring, the wine is started for a second fermentation in the bottle. Once the refermentation is complete, the yeasts remain in the bottom of the bottle, creating an all-natural deposit and cloudiness.
